Beetroot Orange Salad

For the salad:

4 Oranges, sliced

4 medium sized cooked beetroot, sliced

1 avocado, sliced

For Dressing:

2 tbsp olive oil

2 tbsp red wine vinegar

2-3 tbsp orange juice

Salt & Pepper to taste

For serving:

50g crumbled feta

2 tbsp mixed toasted seeds

2 tbsp fresh mint


  1. Slice the oranges, beetroot, and avocado.
  2. In a small jar, combine olive oil, red wine vinegar, orange juice, salt, and pepper to make the dressing. Shake to combine.
  3. Arrange the sliced oranges, beetroot, and avocado in a serving bowl.
  4. Drizzle the dressing over the salad.
  5. Sprinkle crumbled feta and toasted seeds on top.
  6. Garnish with fresh mint leaves.
  7. Toss the salad gently to combine the ingredients.
