Christmas Pudding Fudge

Nothing screams Christmas more than a flaming Christmas pudding emerging from the kitchen on Christmas Day. However, if you're like my mom, who can never seem to keep that flame going for more than three seconds, or like me, dreading the thought of eating a heavy pudding after all that turkey, then these little fudgy Christmas puddings topped with Baileys white chocolate ganache are just for you! These chocolate fudge balls are enriched with mince pie filling, lifted with orange zest, and warmed up with ground mixed spice.

Kitchen Tools Needed

  • Glass bowl
  • Large and medium saucepan
  • Spoon
  • Piping bag

Ingredients for Christmas Fudge

  • 1 can (397g) condensed milk
  • 300g milk chocolate
  • 100g dark chocolate
  • 30g unsalted butter
  • 4 tbsp mincemeat
  • 1 tsp mixed spice
  • Zest of 1/2 orange

Ingredients for White Chocolate Ganache

  • 200g white chocolate
  • 75ml heavy cream
  • 25ml Baileys

Method

  1. Prepare Your Tray
    Grease and line a baking tray that will fit in your fridge.

  2. Make the Fudge
    Using a nonstick saucepan, break up the milk and dark chocolate and melt over gentle heat. Add the butter, condensed milk, mixed spice, orange zest, and mincemeat. Stir continuously until well combined.

  3. Set the Fudge
    Pour the fudge mixture onto the lined baking tray. Let it cool in the fridge for 3 hours or until set but still pliable. Use a tablespoon as a measuring guide to roll the fudge into balls. Place the fudge balls back into the fridge to firm up.

  4. Make the Ganache
    Heat a pan of water with a glass bowl resting on top, ensuring the water doesn’t touch the bowl. Add the white chocolate and melt until smooth. Whisk in the cream until fully incorporated. Remove from heat and stir in the Baileys. If the mixture thickens, keep whisking. Transfer the ganache to a piping bag or bowl and refrigerate to cool and thicken (this can be done overnight).

  5. Decorate the Fudge
    When ready to decorate, check the ganache consistency. If it’s too thick, microwave in 5-second increments until just pourable. Pipe or spoon the ganache onto each fudge ball and top with festive baking decorations.


Pro Tip

The fudge mixture should be gooey and won’t set hard, so don’t worry if it seems soft—it just needs some fridge time.
